Numerous expert lectures, master classes, presentations and demonstrations featured in the supporting programme of MODERN BAKERY MOSCOW attracted interest from many industry visitors. Focal points of the supporting programme included the topics of confectionery, snacks and coffee as well as baking in the supermarket and the Russian market for frozen baked goods.

New ideas for Russian bakers and confectioners
Confectionery, snacks and coffee in the master classes
The daily master classes enjoyed particularly great popularity and were attended by MODERN BAKERY industry visitors.
In the master class "Snacks, Confectionery & Coffee" organised by Ost-West-Partner in cooperation with the Pekarnja trade magazine, a very large number of industry visitors obtained information on new snack ideas and trendy coffee creations. Snack expert Volker Seele presented new creations for hot and cold snacks promising high profits at low cost. Johannes Mussenbrock, Master Confectioner from the Rhineland, took over the "sweet" part and presented the great art of small tartlets and pastries "to go" for industry visitors. Barista Ekaterina Tschernoglasova wowed the audience with her charm and exclusive coffee creations. To go along with the coffee, Rainer Kaldewei-Dedy of Dedy GmbH served pralines he had freshly covered in chocolate.
The "Confectionery" master class was also extremely popular with industry visitors, who informed themselves about new ideas for sweet treats as well as glazing and decorating techniques.
Expert lectures on current topics in the Russian industry
As part of MODERN BAKERY MOSCOW, Russian and international experts spoke on current topics in the industry.
Under the motto "Process and Quality Optimisation", the technologists of the bakery industry informed themselves about the latest developments in the field of sourdough processing as well as temperature and humidity measurement. The problems of product standardisation were discussed in a series of presentations by the Russian Academy of Agricultural Science as well as the Russian technical laboratory for quality analysis GF Sojus Snab.
Since fresh baked goods from the supermarket are also gaining popularity in Russia, numerous experts at MODERN BAKERY MOSCOW discussed the following questions: What ovens can be used in supermarkets? Is there potential for frozen baked goods in Russia and how can an unbroken cooling chain be guaranteed? At the end of the presentations, supermarket representatives informed themselves about ideas for offering baked goods in supermarkets in the "Snacks, Confectionery & Coffee" master class.
Since the international financial and economic crisis has also affected the Russian bakery industry, the International Academy of Industry - one of the most important organisations of the Russian industry - offered information about strategies to fight the crises as part of a roundtable.
